'Sorvo' means 'a sip' in Portuguese. It reflects our philosophy of slowing down and savouring what matters.
Q. What kind of wines do you produce?
We craft small-batch, minimal-intervention wines that reflect the land. Our current focus is on skin-contact (orange) wine, and we have one-off fresh red wine.
Q: What grape varieties do you use?
We use native Portuguese grapes: Arinto for our orange wine, and Castelão for our red.
Q: Do you use oak in your wines?
No. We prefer to let the fruit speak for itself. Our wines are aged in stainless steel or left on skins, allowing natural complexity to develop.
Q: How should I serve Sorvo Orange?
Serve slightly chilled, around 12-14°C. It pairs beautifully with grilled vegetables, aged cheeses, or rich seafood.
Q: Do your wines age well?
Yes. While they are ready to enjoy now, our wines - especially Sorvo Orange - can develop further complexity over 2-3 years.
Q: Can I visit the vineyard or taste the wines?
We are part of the Quinta dos Vales Wine Estate in Estombar. Visits and tastings can be arranged through their team or by contacting us.
